How we extract our olive oil?Processing

After harvesting, with a traditional method without any machines, the olives go through a process called trituration in French.

We wash

The first step in processing line is washing. The olives are washed with drinkable water to ensure that all dirt, leaves and foreign materials are removed so that they don’t contaminate the oil.

We crush

Next, we crush the olives in order to get a homogenous past. We crush the olives using only mechanical methods, never using any high heat or solvents to guarantee the quality of Extra virgin olive oils which is different from refined grades of olive oil which are made using excessive heat or chemicals that affect the taste and quality.

We blend

The next step is to blend the paste.

We separate

The decanter separates the stones, pulp and oil.

We eliminate

The vertical extractor eliminates any particles which may still be in suspension in order to obtain finally our green gold.

Packaging

Storage is a very important step of any food, including olive oil. In fact, olive oil shelf life can be influenced by different factors, however, the selection of proper storage conditions, including packaging, can be of great importance

That’s why, in our factory we choose the best quality of bottles and cans to protect the best quality of olive oil from oxygen and light.

The analytical control we perform on the oil we market is of fundamental importance; this allows us to guarantee its authenticity and its food security.

Hence the importance of having a laboratory that can perform the required analyzes to enable us to select the best aspect of olive oil so we can be faithful to our commitments.
